August 14th, 2010 - Daily Dish
11Well…This week was what I like to call “Back to Real Life Week” …You know what i’m talking about, that week back to work after a vacation, where it’s hard to concentrate, and ‘get down to business’ because all you want to do is go back to laying out by the pool and hanging out on the beach!?! ;) However, my husband and I had a chance to give each other our one year anniversary gifts this week, which brought a little ‘excitement’ and something to look forward to!
I wanted to surprise my husband with his gift, which was a I-Mac desktop computer, (he has always wanted one to do his graphic design work on!) So I told him I would be gone for a while grocery shopping…while all the while I was picking up his computer! I went and grabbed a few groceries, so I would have something to bring in..and send him (like I usally do) to retrieve the rest of the groceries in my car!
When he walked out to the car, he certainly didn’t found much more than groceries,when he saw his new computer sitting in my back seat! I then ran out to watch his reaction and scream ‘Happy One Year Babe!’ It was awesome, and I pulled it off without a hitch which was a relief…(because let’s just say I rarely pull off surprises!)
Little did I know that Sean had his own ‘tricks’ up his sleeve, and as I was about to get a huge surprise of my own! Moments later, as I was putting the groceries away, I turned to see Sean walking in the kitchen with a box that was beautifully wrapped by Williams and Sonoma! I lit-up inside as I opened the box, and saw something that I have always wanted, but always seemed to be just out of reach…A VitaMix Blender!!! And let me tell you..This is a true gift from God! He is so awesome, and He cares about even the simple ‘desires’ of our hearts! He is SO good when you delight yourself in HIM! :)
August 9th, 2010 - Daily Dish
15For my one year anniversary, my husband Sean took me to Ft.Lauderdale, Florida! It was such an amazing trip and very relaxing! We purposely spent most of the days laying out, eating out, and simply do a whole lot of ‘nothing’ except for spending time together! Our hotel was right on the beach, which was perfect for the sunny and beautiful days we were blessed with.
My ‘eats’ were definitely different considering we stayed in a hotel room. There was no fridge or means of cooking food, but I managed to find something relatively healthy, yet tasty, just about everywhere we went!
July 26th, 2010 - Daily Dish
18The past week went so quick, I barely remember what happened~ I guess that’s what happens when you work full-time, (and work the weekend)! This was my first week off-orientation..And it was very scary at first…But I am also loving the feeling of walking in the room and being able to say, ‘Hi, my name is Katie, and I’m your nurse for tonight!’ :)
God is sooo good, and I have so many praise reports when I finish work every night! He has given me so much favor with every one I work with, and even my patients! I find it interesting how the nurse before me will ‘warn’ me that a patient was ‘difficult’, and when I go in the room with a smile, (and show them compassion), they are suddenly sweet as a pea! :)
July 18th, 2010 - Daily Dish
13I had a wonderful 2nd full week of working as a nurse…and I must say it’s amazing how quickly everything is starting to ‘come together’~ Much quicker than I thought at least! :) I love everything about my new job, except for working every other weekend that is…But hey, that just means I get days off during the week right!?! :)
Starting this full-time job has got me thinking about how to integrate my passion for caring for people, with my love for cooking/baking, and teaching people how to live healthy lifestyles! I have thought up a few ideas that are nursing-related such as becoming a certified diabetes nurse educator, (where I would teach patients newly diagnosed with diabetes how to eat healthy)…But ultimately, I have already had a chance to integrate my two passions together in none-other than the nursing ‘break room’!
July 12th, 2010 - Daily Dish
16Whew! Well after a 6 day work week at my new job I am finally sitting down for what feels like the first time in a week! I love my new nursing job, and I so appreciate all the prayers and words of encouragement! God has been so faithful to lead and guide me through this time!
I have already learned so much about nursing, myself, and God in the short period of time I have been at this new job. The most important thing is that of course that I simply can’t lean on my own understanding, and that I NEED GOD and His wisdom.
Another thing that has changed after starting a full time job is my daily meals! With 8 hour work days ahead of me I don’t exactly have the time to cook a hot meal every day, and I definitely have to plan ahead!
June 27th, 2010 - Daily Dish
19Hey everyone! I have had a busy week as I stated in my last post..I got offered 2 new jobs (and had to pick which one I wanted, talk about a blessing!) …Got in an accident, (I’m OK thank God!)… And started my new job all in one week! It was a whirl-wind!
Needless to say, I’m still here, and so thankful for life, and God providing an awesome job that I think i’m going to really love! So far I love the people I will be working with and loved all that patients I’ve met!
That being said, I was due for a much-needed date with my hubby! So after breakfast we went to church, and then out to the mall and a date~ Olga’s, then a movie (Karate Kid), and then out to Applebee’s for dinner! (Talk about a great “date”!!!) :)
I of course started my day with one of my new favorite shakes~ an Orange Cream Cooler (which really is too funny since I had no idea we would be going to Olga’s for lunch!)

June 25th, 2010 - Daily Dish
6Hey everyone! Sorry for the ‘wait’ on recipes being posted this week..I got in a car accident (Thank God..I am OK..But my car isn’t…And I was very shaken up!) :( And started my new nursing job! :) So it’s been a bit crazy to say the least!

41My 25th birthday was this last Thursday and it was wonderful!!! This Daily Dish is a bit different from all the rest, because it’s filled with all the wonderful treats (basically all my favorite foods) I had on my birthday!
Also, today is the day I announce the winner of my giveaway!!! Thank you to everyone who entered and sent me beautiful pictures and descriptions of how their recipes turned out! I SO ENJOYED reading all the reviews, and hearing the stories about how family members were ‘convinced’ that healthy food can taste good!

9Wow…What a busy week for me! In addition to working 5 days this week, I had an interview (got offered the job- Yay!), bought (for the first time ever) some veggies to grow in my own little garden, and even survivied a week without my computer! ( I don’t recommend it– it was in the shop. I had to use my hubby’s I-Pad for the week– Not ideal to say the least!)
In addition to all of that, (whew) I started to think up some ways that I could further teach people how to make lifestyle changes that would improve their health! After careful consideration, I thought of some realistic ways that I would be able to provide people with the support and guidance they need to get healthy, and/or lose/maintain a healthy weight… Just in time for the summer! :)

13I hope everyone had a wonderful memorial day weekend! I personally had a wonderful weekend that was filled with some of my favorite things! Some of those things included grilling outdoors with my family, going shopping, going to Mongolian BBQ, and as always, going to church!
Our service at church this week was particularly amazing, as our pastor gave honor to the men and women who have dedicated their lives to protect our country. He tied in the message to how Jesus gave His life for our freedom, and it was a tear-jerker to say the least! That being said, I want to take a quick moment to say thank you to all the men and women who have dedicated their lives to protect our nation, and also a special thanks to their families!
