Asian Chicken Salad w/ a Crunch

Here's the Dish

I recently went to Applebee’s for dinner and I ordered the Asian Chicken Salad. I enjoyed the salad so much that I realized that I simply had to re-create it at home! This salad is sweet with a hint of salty, and the cilantro adds a burst of flavor with each bite! The textures of crunch from the cabbage, carrots, and snow peas are a wonderful contrast to the delicate lettuce and chewy chicken! Each bite contains a burst of flavor, which makes it hard to put your fork down!

Method

The estimated total time to make this recipe is 10-15 minutes.

In a large bowl place salad greens, chopped chicken, cabbage mix, snow peas, red pepper, and red onion and toss gently.

Sprinkle almonds and cilantro over salad, and toss gently with dressing if serving immediately. (If you are not serving the salad immediately, or if you plan to save some for leftovers, then pour dressing over individual servings so the lettuce will not get soggy.)

1/3 cupLight Asian salad dressing of choice
3 cupsCabbage/Slaw mix OR lettuce of choice
3 cupsShredded lettuce OR lettuce of choice
2 cupsChicken, cooked and chopped
1 cupSnow peas, washed and trimmed
1Red bell pepper, washed and cut into thin slices
1/4 cupRed onion, finely sliced
2 tbsSliced Roasted Almonds
1/4 cupCilantro, chopped
