Broccoli Cauliflower Salad with Bacon

Here's the Dish

This is a healthy version of a classic broccoli salad with the addition of cauliflower. The great part is that it can be prepared the day prior to serving, then served chilled or at room temperature. This salad seems to taste better after it sits overnight,which allows the flavors to marinate together… And it stays good in the fridge for about three to five days (if it lasts that long)! This salad makes a quick and easy side dish that would taste great with a piece of chicken or with any meal!

Method

The estimated total time to make this recipe is 4 Hours or overnight.

Wash and trim stems off of broccoli and cauliflower.

Break cauliflower and broccoli into bite size florets and place in a large bowl.

To make dressing, combine all remaining ingredients (except bacon) in a small bowl and mix until well combined.

Add dressing to broccoli and cauliflower and toss gently.

Chill several hours or overnight.

Garnish with bacon just before serving.

Ingredients

1 Head (or about 3-4 cups) broccoli
1 1 Head (or about 3-4 cups) cauliflower
6 Slices cooked bacon, crumbled1
1/2 cupFinely chopped red onion
1/4 cup Plain yogurt (greek yogurt preferable)
1/4 cupLight miracle whip (or light mayonnaise)
1 tbsApple cider vinegar
1-2 tbs Sweetener of choice2
PinchSalt and pepper to taste
Optional1/3 Cup Craisins (or raisins) or 1/4 Cup finely chopped almonds

1 I prefer turkey bacon or center cut bacon

2 I prefer honey for this recipe

This recipe looks great but I’m never very good at making the turkey bacon, what is the trick?! Do you microwave it? or is there a particular brand I should be looking for? Do you cook it on a non-stick pan or not? See full of questions, if I can figure out this part, I’d like to bring this dish to my girlfriends on Sunday.

Great question Patsy! Yes I definitely do recommend a brand of turkey bacon, the ONLY one I like is Louis Rich (by Oscar Meyer) brand! :)

And I would microwave it for about 1-2 minutes per piece depending on your microwave of course!

I put it on a paper towel, and cover it with another piece of paper towel and you may need to test it for the first piece until it looks crispy!
