Cobb Chicken Salad Sandwich

Here's the Dish

One of my favorite salads to order at a restaurant is a a Cobb Salad! It has a variety of ingredients that pair extremely well together. One of my favorite things to eat for lunch is a wrap sandwich, so I decided to combine the flavors of my favorite salad with a wrap sandwich. This recipe is truly the best of both worlds in that it has the portability of a sandwich and all of the awesome flavors of a delicious Cobb Salad! Enjoy!

Method

The estimated total time to make this recipe is 5-10 minutes.

In a small bowl, combine yogurt, mustard, salt, pepper, chicken, bacon, egg, and onion. Mix until everything is well combined.

Top each wrap with 1/2 of the chicken salad, followed by the tomato slices, and lettuce, (and avocado slices and blue cheese if desired), dividing the ingredients evenly between the two sandwiches.

Roll up wraps. Cut in half if desired. Skewer each half with a toothpick to hold the sandwich together…or wrap in foil if packing for lunch! 

Ingredients

2High fiber wraps 1
1/4 cupPlain Greek yogurt (or 2 tbs yogurt + 2 tbs light mayonnaise)
1/2 tspMustard
PinchSalt and Pepper
1/2 cup (4 oz)Cooked chicken breast, chopped into bite size pieces
1 Hard boiled egg, roughly chopped
2 slicesCenter cut or turkey bacon, cooked and crumbled
1/4 smallRed onion, finely chopped
2 largeTomato slices, cut in half
1/2 cup (or a large hand full)Shredded lettuce (or lettuce of choice)
Optional1/2 avocado, cut into slices, 1/4 cup blue cheese (or feta cheese) crumbled

1 I like La Tortilla, Ezekiel, or Flat Out Wraps.

Katie's Tip!

Cooking for one!?! No problem! This recipe makes 2 sandwiches, which means you will have lunch ready to go for the next day!

When you do a nutritional breakdown, does that typically include the “optional” ingredients or is that something we figure in ourselves should we choose to use it?
