I just love chicken fajitas! They are such a wonderful ‘family’ food in my opinion, because they suit just about everyone’s taste! The great thing about fajitas is that the basic ingredients are naturally healthy…However, many recipes call for a heavy amount of oil, making them surprisingly high in calories. This recipe is flavorful, light, and so easy to make! Just put everything in a crockpot in the morning, (or the night before), and you will have a healthy and complete meal ready in just a few hours!
If you don't own a crockpot, no problem! I provided an alternative preparation method using a stovetop!

Is the wrap included in the points? Or is it just the peppers and chicken?

I made this last night and cooked high on 3 hrs – tasted great! I did find that it needed some crunchy texture… not sure what I’ll add in to give it some crunch. Thanks so much for providing this recipe! It’s awesome comfort food at it’s best – but still good for you!

Thanks for doing this site and coming up with all of these fabulous recipies! Ive noticed that most of your recipies have optional toppings or optional ingredients. Are these optional items included in the stated calories for each serving?
Dashing Dish said:
no..if its optional its not included

I made this for dinner last night and my husband and I both really liked it. We had some leftovers in the crockpot so for dinner tonight I added a can of black beans and we ate it like soup with a spoon of sour cream and salsa on top. It was delicious you could really taste the lime and the flavors were awesome.

I hate cooking and am not very good at it either. This recipe was so easy to make and it tasted amazing. The only think i would change would be to add some of the peppers at the end because I like the crunch. :-)

Yummy and makes a lot so I don’t have too cook tomorrow! I had them in a lettuce wrap and my kids had them in a tortilla!

Could you cut up the veggies and meat beforehand, freeze and then cook in the crock pot later?
Dashing Dish said:
sure could

These were amazing!! I added 2 garlic cloves just because I love garlic… I can’t believe how tender the chicken was! I’ll definitely be making this again.

I’ve made fajita’s many, many times but these have to be one of the best! I will never again buy the “fajita packets”. Thank you!
