Crockpot Lime Chicken Fajitas

Here's the Dish

I just love chicken fajitas! They are such a wonderful ‘family’ food in my opinion, because they suit just about everyone’s taste! The great thing about fajitas is that the basic ingredients are naturally healthy…However, many recipes call for a heavy amount of oil, making them surprisingly high in calories. This recipe is flavorful, light, and so easy to make! Just put everything in a crockpot in the morning, (or the night before), and you will have a healthy and complete meal ready in just a few hours!

Method

The estimated total time to make this recipe is 3-8 hours.

1

Wash peppers, and cut into long-large strips. Cut onion into 4 segments. Cut chicken into one inch strips.

2

Layer everything in the crockpot, starting with the salsa, chicken breasts, seasoning, lime juice, peppers, and onion. Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until chicken is cooked through and peppers are tender.

3

Remove chicken and vegetables from the crockpot and serve on warmed tortillas (or lettuce wraps) and serve with toppings of choice.

4

If you don’t own a crockpot, spray large non-stick skillet with non-stick cooking spray. Cook chicken over high heat stirring until browned on all sides (about 6 minutes). Reduce heat to medium and add the peppers onion and seasoning to chicken.  Add 1/2 cup water and mix well. Cover for about 2 minutes, to steam the peppers and onion, and remove, stirring until water evaporates and onions and peppers are tender and sauce is thickening. Stir in salsa, and serve on tortillas

Ingredients

1 cupSalsa
1.5 lb (or about 4-5) Chicken breasts
1 pktStevia or pinch of sweetener of choice (optional)
2 tbs Fajita seasoning 1
2 tbs Lime juice
3Bell peppers (color of choice)
1 mediumOnion
Optional: 4 Low carb flour or corn tortillas OR lettuce wraps.
Diced tomatoes, green onions, low fat Greek yogurt, shredded lettuce for topping

1 Or you could use 2 tbs taco seasoning, or make your own by mixing together 2 teaspoons chili powder, 1 teaspoon ground cumin, 1/4 teaspoon salt. Be sure seasoning is gluten free if sensitive.

Katie's Tip!

If you don't own a crockpot, no problem! I provided an alternative preparation method using a stovetop!

Is the wrap included in the points? Or is it just the peppers and chicken?

I made this last night and cooked high on 3 hrs – tasted great! I did find that it needed some crunchy texture… not sure what I’ll add in to give it some crunch. Thanks so much for providing this recipe! It’s awesome comfort food at it’s best – but still good for you!

Thanks for doing this site and coming up with all of these fabulous recipies! Ive noticed that most of your recipies have optional toppings or optional ingredients. Are these optional items included in the stated calories for each serving?

I made this for dinner last night and my husband and I both really liked it. We had some leftovers in the crockpot so for dinner tonight I added a can of black beans and we ate it like soup with a spoon of sour cream and salsa on top. It was delicious you could really taste the lime and the flavors were awesome.

I hate cooking and am not very good at it either. This recipe was so easy to make and it tasted amazing. The only think i would change would be to add some of the peppers at the end because I like the crunch. :-)

Could you cut up the veggies and meat beforehand, freeze and then cook in the crock pot later?

I love this site! Since my children have very busy schedules and I work full time I don’t have much time to cook so we use the crockpot a ton in our home. Thanks for this recipe, can’t wait to give it a try!

What do you use to calculate the nutritional info? My daughter is a type 1 diabetic so we have to count carbs for all her meals. For the life of me, I can’t figure out what in this meal would be 15g of carbs (without the tortillas). Thank you!
