My husbands favorite food growing up was beef and cheese burritos, so when we got married I immediately asked my mother-in-law for her burrito recipe! I was relieved at how simple the recipe was, and with a few minor ‘tweaks’ I made an even healthier version of these burritos so it was something we could both enjoy! These burritos are wonderfully rich and cheesy, and for only 314 calories per serving, it makes for a perfect weeknight meal that won’t un-do your whole day!
In addition to the ingredients and prep of this recipe being extremely simple, these burritos can be refrigerated for up to a week, and frozen for up to 6 months! I often make 4 plates of burritos for my husband, so he has a home-made dinner while i’m at work, and freeze a few for later, which is perfect for busy week nights! You can modify these burritos to be as complex or simple as you would like using my optional filling and topping ideas, but I love the simplicity of the meat, cheese, and beans, and apparently so does my husband!

Hey Katie!
I’m loving your healthy recipes! I’m on a family medicine rotation right now with a doc who is a nutrition specialist and she’s always promoting the Extreme Wellness Low Carb High Fiber wraps. They actually have less carbs, more fiber, and more protein than LaTortilla wraps. Have you tried them?

Yum! These would also work with some TVP in place of the ground meat. I think my husband would love them, too!

These were hands down the easiest and best tasting burrito’s I’ve ever attempted to make. My fiance’ loved them so much we’ve made them 3 times now and added in more veggies to the bean mix like shredded carrot’s and chopped mushrooms. You are so awesome and I am so glad I found you!!
