Homemade French Toast Ice Cream!

What could be better than all of the warm flavors packed into a cold & creamy treat!?! This French Toast Ice Cream is packed with protein, is low in sugar, and only takes about 20 minutes to make from start to finish! Whether you are looking for a quick & delicious dessert or snack, this ice cream may just be your new favorite summer time treat!

Method

The estimated total time to make this recipe is 20-25 minutes.

Combine all of the ingredients (except for chocolate chips) in a blender (or food processor), and blend until smooth.

Pour mixture into ice cream maker. Let the ice cream churn for about 20-25 minutes, or until it becomes a  ‘frozen yogurt’ texture. In the last few minutes of churning, add the chocolate chips if desired. Scoop into 2 individual bowls, and enjoy! (If you prefer more of a firm ice cream texture, scoop yogurt mixture into a Tupperware and cover. Place in the freezer to firm up for another 20-30 minutes and enjoy!)

Ingredients

1/2 cupPlain low fat Greek yogurt
1/2 cupCottage cheese (or an additional 1/2 cup yogurt)
1 cupLowfat almond milk, skim milk, or milk of choice
6 pktsStevia or 1/4-1/2 cup sweetener of choice, or to taste
1 tspMaple extract (or 1/8 cup low sugar maple syrup)
1/2 tspCinnamon
Pinch Nutmeg or pumpkin pie spice
Optional: 2 tbs mini chocolate chips

Youre so smart, i love all the recipes you make and i wish i could make them all. i made this after my workout and it was really creamy and had a great texture, but i was just wondering about the maple extract did you mean 1tsp? The reason I ask is because the maple flavor was very over powering, good, but strong!

You could always freeze for a few hours or until softly frozen and put it in the mixer until well mixed. You can do this a few times until you get the consistence you want.
