		<description>The ingredient list had me thinking &quot;lasagna&quot; so I added a half cup of low fat ricotta cheese to the filling.  I also skipped the sweetener and used ground beef instead of turkey but otherwise followed the recipe (I was able to fill 4 peppers).

This was delicious and I&#039;ll make it the same way again, though my version probably has more calories, and from fat.</description>

I have them multiple times over the past few months and my husband always looks so delighted when he takes his first bite and of course I am too... the roasted pepper with the meat sauce is SO sweet and tart and delicious.  They are all prepped and in the fridge ready to back later and my mouth is watering.  Thanks so much for the great recipe!</description>

I used shredded yellow squash instead of the spinach because I had some in the freezer. Only think I would do different next time is boil the peppers for about 5 minutes before filling and baking. Other stuffed pepper recipes I have used call for this step and I prefer the more well done pepper, especially for my 15 month old.</description>
