Low Carb Pizza Panini

Here's the Dish

This recipe is so simple, yet soooo delicious! I’ve been making panini’s for lunch for quite a while now, because they are a quick and balanced lunch option and they are ready in minutes! It wasn’t until I made this Pizza Panini for my sister that I realized I needed to share it with all of you! She was so excited about the sandwich in fact, that it honestly made me laugh! I said, ‘geez, it sounds like you’ve never had lunch before!’ She replied, ‘No, this is just one really good sandwich. It’s like a healthy slice of pizza!’ Well imagine that, a sandwich that tastes as good as a slice of pizza, and it just so happens to be quick, easy and healthy too!


The estimated total time to make this recipe is 5-10 minutes.


Warm up panini grill, or a sauté pan over medium high heat, and spray with non-stick cooking spray.


Spread pizza sauce over 1/2 of the wrap bread. Sprinkle seasoning over sauce, followed by the meat of choice. Sprinkle shredded cheese on top of the meat layer, (or pull apart string cheese and lay on bread), and end with the Parmesan cheese, (and pepperoni if using).


Fold bread in half over meat and cheese. Place sandwich in the panini grill, (or prepared saute pan), and cook until sandwich is golden brown and toasted on both sides, and the cheese is melted. (Note: If using a saute pan, you will need to flip the sandwich to toast both sides, a panini grill will take care of both sides at once!)


Using a pizza cutter, cut sandwich into wedges if desired. Serve warm and with a side of pizza sauce for dipping if desired! Enjoy!


1High fiber/low carb wrap or flatbread (I use LaTortilla brand wraps or Lavash bread, at about 100 calories per wrap)
1/8 cupPizza sauce (I used the squeezable kind by Contadina)
1/4 cupLow fat shredded mozzarella or 1 cheese stick
1 tbsParmesan cheese
1/2 tspItalian blend or pizza seasoning
4 ozThinly sliced ham or turkey lunchmeat 1
Optional: 3-4 Turkey pepperonis, (microwaved on a paper towel for 30-60 seconds until crisp like bacon)

1 OR 4 0z of chicken (cooked and shredded), OR 1 Morningstar pizza burger (cooked according to package directions)

Katie's Tip!

Try adding any veggies that you would enjoy on top of pizza! Yum!

Turkey pepperoni has been appearing in our fridge the past few weeks [it's on sale] so we’ve been getting creative and pizza-fying many different dishes… Subs, salads, pasta, eggs- all so tasty! I made a similar recipe last week but called them “pizzadillas” since they reminded me of quesadillas :P

Well I did try it used all the stuff you suggested By added sauted onion
garlic, sweet red peppers, and mushrooms..also pepperoni, mozzarella and parmesan cheese. But i also used spray butter for the out side of tortilla. What a great idea…..great dish….thank you..
