This was one of the first recipes I baked. However, I didn't have mini cupcake pan. I ended up with mixture left over and didn't want to wait for my cupcake pan. I added enough flour to make mixture a little thicker and baked as cookies. My husband really liked them. I have enjoyed learning this new healthier way to eat. Thank you!!

I made these last Sunday morning. My 28 year old girls had them warm out of the oven, and loved them. I sent some home with them for my son, and he never got them. I will be making these on a regular bases. So good, and good for you. I love chocolate, peanut butter and bananas together. Great recipe.

Made these this morning, they were awesome! They rose nicely, were moist and fluffy... almost like cake :) I've been gluten free for almost a year and I can safely say these are the best muffins I've made that are GF! I used sour cream instead of yogurt and sugar instead of stevia. My recipe made quite a few too, probably closer to 40 minis. Thanks for all the great recipes!

These look great. Could I use PB2 in this recipe? If so, how much powder should I use and how much water? I LOVE your recipes! Thanks so much.
