No Bake Mocha Frappuccino Cheesecake

Here's the Dish

I just finished having a Starbucks Light Mocha Frappuccino, and I thought, why not put these flavors into a no bake cheesecake! This cheesecake is smooth, chocolatey, and creamy and it doesn’t weigh you down like an average cheesecake does! This recipe is quick and easy to make, and the perfect fix to any chocolate craving! This recipe has 1/3 of the fat and 1/2 of the calories of the average chocolate cheesecake~(but shh… it’s so tasty, no one will ever know!)


Method

The estimated total time to make this recipe is 3-4 Hours.

In a small cup dissolve the coffee powder in the water.

Place the cream cheese in a large mixing bowl and mix until fluffy, scraping the sides and bottom of the bowl. Add the sweetener of choice, coffee, cocoa powder, chocolate syrup and continue beating until smooth.  Fold in the whipped topping, until everything is combined.

Spoon the mixture into the pie crust and cover.  Refrigerate for at least 3 hours, (or overnight).

Ingredients

2 tsp Instant coffee powder
1 tbs Hot water
1 pkg(8oz) Fat free cream cheese, softened
1/2 cup Baking stevia OR 1 cup sweetener of choice that measures like sugar 1
3 tbsUnsweetened cocoa powder
2 tbs Lite chocolate syrup
1 (8oz) Container thawed fat free whipped topping
1 Prepared chocolate graham pie crust
OptionalChocolate shavings or lite chocolate syrup and whip cream for garnish!

1 I used NuNaturals More Fiber Stevia Baking Blend. If using packets of stevia, I recommend using about 8-12, or adjust according to taste.

I made this, delicious!!! Everyone loved it but mine came out kind of mushy, I thought after being in the frig for 7hrs that it would set more or is that the way it’s supposed to be? Just curious, I’m definately going to make it again though yum-yum!

Well..Because the recipe used 1 whole container cool whip, and only 1 stick cream cheese (hence the reason its low cal!:)) It will be a lot ‘lighter’ than regular cheesecake! If you wanted you could use another stick of f.free cream cheese and only use 1/2 container of cool whip to make it a bit ‘thicker’! You could also mix a tbs. of gelatin (plain) with the instant coffee and that will help it ‘firm’ up a bit! Let me know! :)
