Pumpkin Pie Protein Overnight Oatmeal

Here's the Dish

This is one of the easiest, yummiest, and well balanced breakfasts that can be thrown together the night before, and is ready when you are in the morning! There is no longer any excuse for not eating a delicious and satisfying breakfast, no matter how busy your mornings are! This pumpkin pie overnight oatmeal is guaranteed to spice up the most important meal of the day!

Method

The estimated total time to make this recipe is 5 minutes.

In a small bowl, mix the pumpkin, milk, and yogurt together. Add the rest of the ingredients and stir to combine. Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour so the oats soften and absorb the liquid). Top with syrup/honey or chopped pecans for crunch if desired! Enjoy cold, or microwave for 30-60 seconds to enjoy warm!

Ingredients

3 tbsPumpkin
1/2 cupUnsweetened almond milk or low fat milk of choice
1/4 cupPlain low fat Greek yogurt
1/4 tspPumpkin pie spice
1/4 tspCinnamon
1/8 tspSalt
2 tbsBaking stevia or 1/4 cup sweetener that measures like sugar 1
1 cupOld fashioned oats
1/4 cupProtein powder (or additional oats)
Optional: 1 tbs Low sugar maple syrup or honey, chopped pecans or nuts for topping

1 Or 3-4 pkts stevia.

I am definitely going to make this!! My family is so bored with plain oatmeal but we still all eat it everyday. Is vanilla protein powder OK? That is what we have. I am hesitant to use it because the flavor might overpower the whole recipe. The vanilla flavor has a fake taste to it. What kind do you use?
