Skinny Layered Pizza Dip!

Here's the Dish

I started thinking about great Superbowl recipes about a week ago, (I personally am not a huge football fan, but the men in my family sure are…And I am generally the one to prepare food for the big day!) As I began to think about ‘football’ food, I thought of three things, pizza, nachos, and buffalo wings. In an effort to combine two of the three, I thought of making pizza nachos, although, I wanted something I could make in advance so I wasn’t in the kitchen all day, and therefore missing time with family. After giving it some thought, I decided to do ‘spin’ on pizza nachos, without actually putting the toppings ON the chips..I came up with a dip that can be made a day or two before that can be served with baked chips, or veggies of your choice! Enjoy!

Method

The estimated total time to make this recipe is 30-35 minutes.

Preheat oven to 350 degrees. Spray a 9-inch pie plate, (or a 9×13 baking pan) with cooking spray.

In a medium bowl, mix together the ingredients for the first layer. Spread first layer in the prepared baking dish.

On top of the first layer, follow by spreading each ingredient in second layer (in order) over cream cheese layer. Start by spreading pizza sauce, followed by mozzarella, green pepper, pepperonis, and ending with Italian seasoning and olives (if desired).

 Bake for 25-30 minutes, or until cheese is melted and bubbly.

Ingredients

Layer 1:
1 (8 oz) pkgFat free cream cheese, softened 1
1/4 cupLow fat plain Greek yogurt
1/4 cupLow fat cottage cheese (or additional 1/4 cup Greek yogurt)
1/2 tspGarlic powder
1/2 tsp Italian seasoning
2 tbs Grated parmesan cheese
Layer 2:
1 cup Pizza sauce
3/4 cupMozzarella cheese
1/4 cupGreen bell pepper, finely chopped (or mushroom or pizza topping of choice)
1/8 cupMini turkey pepperonis (or regular size turkey pepperoni, cut into quarters)
Optional Toppings: 1/2 tsp Italian seasoning, 1/4 cup chopped olives

1 Or 1 cup low fat cottage cheese, pureed in a blender or food processor until smooth. If using cottage cheese instead, leave out parmesan cheese, as it would be too salty!

Katie's Tip!

This recipe can be made a day or two before! Just prepare it, and cover with plastic wrap before baking it. Store it in the fridge until ready to serve. Bake just before serving for a piping hot and fresh dip that is sure to please!
