Soft and Moist “Skinny” Peanut Butter Cookies

When I was a kid, the thought of a peanut butter cookies got me excited for two reasons. One, it meant that I got to bake with my mom and sisters. Second, it meant I got to eat them, which is always a good thing in my book, considering I have always been a lover of all-things peanut butter! The challenge that I have always had was ‘transforming’ this beloved recipe into an equally moist and delicious treat without all the sugar and calories! I knew I had created a successful ‘healthier version’ however, when I took my first bite, and I was instantly brought back to my childhood days!

I tried to work out this recipe using different types of ‘healthier’ flours…But it didn’t quite turn out ‘the same’ as a traditional peanut butter cookie. So, I decided to cut the ‘unhealthy’ ingredients where I could, while leaving the white flour. However, you could definitely try using coconut flour, wheat flour, or whatever flour you choose!

The estimated total time to make this recipe is 25 Minutes.

Preheat oven to 350. In a large bowl, cream together the peanut butter, butter, splenda (or stevia), and brown sugar until well blended. Beat in the egg, milk, and vanilla.

In a separate small bowl, combine the flour, baking powder, and salt, and stir it into the creamed mixture.

Roll tablespoonfuls of dough into equal-sized balls, (if it is too sticky to roll, just add 1-2 tbs of flour to the cookie batter, or stick the batter in the fridge for a few minutes to firm up a bit… that always does the trick!).

Place cookies 2 inches apart onto foil-lined cookie sheets, lightly sprayed with non-stick cooking spray. Press each ball with a fork twice to make a criss-cross pattern.

Bake for 12-14 minutes in the preheated oven, or until edges are lightly browned.

1/2 cup Packed brown sugar

1 1/4 cups Whole wheat pastry flour
3/4 tspBaking powder
1/4 tspSalt

omgomgomg it’s a dream come true!!!!!! I wonder if you could substitute “better n’ peanut butter” for the regular peanut butter??? It’s half the calories and only 2 grams of fat. GOOD WORK KATIE!!!
