I was experimenting in the kitchen today while preparing to head over to my sisters classroom with a sweet treat! I had a boxed cake mix on hand, and managed to whip up one of the sweetest (and easiest) cake recipes in a long time…And just in time for Valentines Day! There are only two simple ingredients to these cupcakes, and honestly, you won’t believe how wonderfully rich and moist they come out tasting!!!
You can make these cupcakes with any variation of cake mix that you (or your sweetheart) would like. You could also use a heart shaped cake pan and make a lovely treat for your sweetheart (and he never has to know it’s light!)
Oh, and by the way…I got the approval from twenty four 3rd graders that these were delicious…I think that means they passed the taste test!

I made these but when I went to make the “frosting” its says 8oz box of sugar free vanilla pudding mix… what am I missing… my box is for 1 oz and it was sort of thin. I love the taste of the cupcakes and frosting, I just wonder if I did something wrong or have the wrong size box of pudding? thanks! Love your blog and recipes!
