Sweetheart Strawberry Cupcakes

Here's the Dish

I was experimenting in the kitchen today while preparing to head over to my sisters classroom with a sweet treat! I had a boxed cake mix on hand, and managed to whip up one of the sweetest (and easiest) cake recipes in a long time…And just in time for Valentines Day! There are only two simple ingredients to these cupcakes, and honestly, you won’t believe how wonderfully rich and moist they come out tasting!!!

You can make these cupcakes with any variation of cake mix that you (or your sweetheart) would like. You could also use a heart shaped cake pan and make a lovely treat for your sweetheart (and he never has to know it’s light!)

Oh, and by the way…I got the approval from twenty four 3rd graders that these were delicious…I think that means they passed the taste test! ;)

Method

The estimated total time to make this recipe is 30-35 Minutes.

Preheat oven to 350, and line (2-12 muffin tins) with cupcake liners.

If you are using anything other than a 12 oz can, measure out 1 1/2 cup of pop.

Beat cake mix and pop together until batter is smooth and creamy.

Pour cake mix into lined muffin tin, filling each cup about half way full.

Place cupcakes in the preheated oven for 18-20 minutes.

While cupcakes are baking, mix together Pudding Mix, Milk, Cool Whip, and Food Coloring.  Slowly beat or whisk whipped topping until all of the ingredients are just combined. (Be careful not to overmix). Add as much food coloring you need in order to get the color you desire.

Place whipped topping in a bowl, and chill in the fridge until cupcakes are cooled and ready to be frosted.

When cupcakes come out of the oven, let cool completely before frosting. When ready to frost, place whipped frosting in a large ziplock bag. Cut the tip off a corner of the bag, and squeeze frosting down to the cut corner. Squeeze frosting out while making a swirling/upward motion and lift at the peak!

Sprinkle with red sugar if desired! Serve to those you love and ENJOY!

Strawberry Cupcakes:
1Box strawberry cake mix (or any regular or low sugar cake mix of choice)
1 (12 oz) Can diet red pop (or any diet pop of choice)
Whipped Frosting:
1 (8 oz) Container Cool Whip™
1 boxSugar free vanilla pudding mix
1 cupSkim milk
3-4 dropsRed or pink food coloring
