I personally LOVE LOVE LOVE zucchini, and could eat it in just about any form or fashion. However, I know there are many people that have their minds made up that they hate vegetables, and they absolutely refuse to try them. I know this, because ‘that person’ was my father, until I made him these zucchini chips! My dad often complains that the ‘texture’ of vegetables is what turns him off, so I thought of ways that I could change that! The coating on these zucchini chips adds the perfect amount of golden brown ‘crunch’ on the outside, while the zucchini remain nicely roasted on the inside!
These zucchini chips are the perfect snack if you’re craving something salty, and they taste great by themselves, or with a side of ketchup or marinara sauce! You could also try putting your own ’spin’ on the recipe by adding different kinds of spices to make them sweet and salty, or even spicy!
I love to make these as a side for my family BBQ’s, and even the pickiest eaters love em’! The only complaint I’ve ever gotten when I make these is that I don’t make enough! (I usually double this recipe when making it for my family, because I could eat the whole tray by myself…No joke!

Those look so good! I love zucchini. I usually slice it in thin layers and put them on the grill but I love the idea of them being crispy like chips.

Absolutely awesome!!! I made a batch in the oven and also tried them on the grill on a vegetable pan made especially for the grill. The chips on the grill were done much faster than the oven chips and the topping burned a little but they were still delicious. Definitely will make these again.

Are they supposed to be crunchy? I made them and I had to cook them an extra 10 minutes, but STILL they were not really crunchy. They tasted really good, but I don’t know if I was supposed to expect a crunch or not. Thanks.

These are soooo good. I have made them several times now. I used the cooling rack in the cookie sheet idea someone else posted. The first time I did it they browned nicely but stuck to the rack. The next time I did it I sprayed the rack with non-stick olive oil spray. That worked great. No more sticking or turning. I made these just tonight but I didn’t have Parmesan so I used Fontinella. They turned out so good. Thank you so much for sharing this recipe.
