I am LOVING the fall season so far! The leaves are changing, and it’s time for a few of my favorite things to come back into my life… pumpkin, warm blankets, and cozy sweats!
I’ve been going a little crazy with the pumpkin this week, (it was out of stock for so long at the grocery store that I bought like 6 cans when I saw it back on the shelves~haha) and have made many of my favorite fall recipes!
Anyways, I thought I would share some of my recent pumpkin dishes, along with my fall decorations I just put up in my condo! I love decorating for the different seasons, and Pottery Barn is one of my favorite stores to buy some cute little accessories, (I would get all of my decorations from there, if I weren’t so practical!)
I started the day off with a circuit workout, and came home to have a Pumpkin Pie Milkshake, with lite whipped cream, cinnamon, and teddy grams crumbled on top! It was like pumpkin pie in a drink!

I followed my shake with some AMAZING Keurig Pumpkin Coffee!
The wonderful people from Cabot Creamery sent me some Coupons to Redeem Free Cabot Products…So naturally, I used it to buy Whip Cream! It was Sweet, Creamy, and Delicious~ and only 15 Calories per serving! Thanks Cabot Folks~ Your Whip Cream is THE BEST, and that’s coming from me, the whip cream queen!!! ;)

For Sean I made some healthy ‘Egg McMuffins’…They are really easy to make healthy, and he thinks they taste just as good as the ‘full fat’ version! Hey~ that way we both win!

I use these English Muffins…100 calories each, high in fiber- yet are still ‘white’ bread (which is important for Sean!)

Center Cut Bacon (20 calories a slice, and a leaner cut of bacon)! I also use 2% Cheese Slices!

And it all comes together to make Sean ONE HAPPY MAN! :)

For lunch, I made Pumpkin Pancakes, My sister created this recipe, and I am waiting on her to write it up for a guest post she will be doing with this awesome recipe soon! Go EMILY!!!

For a snack I had a Pumpkin Protein Cookies!

For dinner I actually had something other than pumpkin! Haha! I made a Veggie Frittata! I also just realized I had ‘breakfast’ foods for every meal this day! It must be because it was my day off! ;)
I started the Frittata by quickly sautéing some Frozen Veggies, and adding 5 Egg Whites, and Parmesan Cheese over low heat on the stove top.

I then put the pan in the oven on broil until the top was slightly browned, and it came out looking like this! The whole thing was only about 250 calories, and was sooo filling!

Like I said, our place is small..but so cozy and such a blessing from God because we are able to pay rent and save for our future home! God is SO GOOD!

Oh my gosh – I had completely forgotton about Meijer’s until I saw the picture of the bacon (I lived a brief period of time in Grand Rapids). I know this sounds weird but I love pumpkin with egg whites and banana.
