This past weekend was filled with some of my favorite Fall Festivities! My friends and I carved pumpkins, I created a pumpkin loaf/muffin recipe (coming this week), celebrated my mom’s birthday…And went to the apple orchard!

I also went to my sisters classroom (3rd graders are so great) and brought along some ‘candy corn’ cupcakes! (I got the idea here). They were so easy to make and they turned out pretty darn cute if I do say so myself! ;)

I simply used a box cake mix..and split the batter between 3 bowls, and used food coloring to make the and yellow/orange layers!

I put one spoonful of each color in each cupcake liner.

And they came out looking just like a piece of candy corn!

I also created a low sugar/high protein Pumpkin Bread Recipe, which I decided to make into Pumpkin Muffins the second time I made it! Both turned out heavenly Moist and Delicious! :)

We spent the day at The Orchard..and it was a BEAUTIFUL day outside! It was about 75-80 degrees out on a fall day in Michigan! (Which is just about unheard of!!!) We were SO enjoying it!!!

They had a wonderful little market where we found lots of Apple Flavored Goodies!

I was checking out the Apple Chips and No Sugar Added Apple Butter! Woo Hoo!
And of course I checked out the nutritional stats! Haha!

And Sean got the doughnuts, We also split a carmel apple with nuts! Yummm!

We enjoyed the Apple Cider too! Such a wonderful fall day!

We had a Family Birthday Dinner for my Beautiful Mom’s Birthday! I made her my version of Paula Deen’s Coconut Cake~which is her FAVORITE! :)

I put Toasted Coconut on the outside and it was SOOOO GOOD!

And we also had a great time with friends Carving Pumpkins! We had a blast as you can see! :)

Pumpkin Carving will never get old…I don’t care how old I am! :) And when/if it finally does, I’ll be doing it with my kiddos! ;)

I LOVE the idea of candy corn cupcakes- how precious! And yes, I love everything has to offer… leaves changing colors, fires in the fireplace, chili, football, pumpkins, candles! :)
