I hope everyone had a blessed week! I know I sure did…God has been putting new dreams and visions in my heart for my future that really excite me! Let me just tell you, serving the Lord makes every day an adventure that I wouldn’t trade for anything in the world! :)
I had one of the best days in a while this week trying out and creating a few new recipes…and what’s even better is that they almost all turned out great! (Now that is MY kind of day! Except I don’t love cleaning the kitchen after I’m done!)
Now on to the Daily Dish!
I started my day off with a Strawberry Banana Smoothie (with a few Peanut Butter Pows mixed in) It was really early when I woke up, and I felt really thirsty (and not extremely hungry), so I had it with only 1/2 a scoop of protein powder and it hit the ‘spot’ perfectly… It was refreshing and just filling enough before my bodypump workout class, (an awesome group-weight lifting class).

For my lunch I was really hungry, because I had a really hard workout at bodypump, so to re-fuel I had what would of normally been my breakfast shake, (which is also my favorite protein shake of all times)…my Peanut Butter Butterscotch Shake with Peanut Butter Pow Cereal on top!

For my mid-day snack I had one of my baking creations of the week…My Banana Chip Muffins!

I had 2 of them to be exact! Warmed with some light butter on top!

My sister and I took off for a quick shopping trip to none-other than Old Navy for their $1.00 flip flop sale, (and wow it was poppin! Haha). We came back pretty hungry, so I made some healthy Chicken Quesadilla’s with LaTortilla ‘Mini’ Wraps (50 calories/7g fiber per wrap!) I used Peach Salsa, which made them slightly sweet/salty…and some Shredded Mozzarella which melted perfectly inside! They were delish!

I started by cooking a chicken breast in some salsa, and put it on one of the tortilla’s…On the other I put about 1/4 cup shredded mozzarella cheese and some tomatoes.

I put the two half’s together and cooked it for about 2 minutes on each side, (until golden brown and the cheese started to melt).

I added some shredded lettuce for crunch, and had a side of salsa for dipping! :)

It was warm cheesy goodness! :)

For dessert, I had a small cup of this Light Mocha Brownie Ice Cream, and it hit the spot on this warm (and beautiful) day! Then my hubby and I were off to see a Iron Man 2! It was a great movie… (and that is coming from a girl who isn’t into super-hero movies all that much!)

I’ve been wanting to try those LaTortilla wraps but can’t seem to find them. :(

Katie~ Thanks girl! :) Yes…Walking with the Lord is an adventure that is always exciting! Have you tried Meijer for the wraps!? They always have them at my Meijer, but they are not with the other wraps, so I would ask someone that works there!
April~ You should be opening your own healthy bakery if you ask me! Also, I’m still planning on trying your wraps!
