The Daily Dish!

June 1st, 2010 - Daily Dish

I hope everyone had a wonderful memorial day weekend!  I personally had a wonderful weekend that was filled with some of my favorite things! Some of those things included grilling outdoors with my family, going shopping, going to Mongolian BBQ, and as always, going to church!

Our service at church this week was particularly amazing, as our pastor gave honor to the men and women who have dedicated their lives to protect our country.  He tied in the message to how Jesus gave His life for our freedom, and it was a tear-jerker to say the least! That being said, I want to take a quick moment to say thank you to all the men and women who have dedicated their lives to protect our nation, and also a special thanks to their families!

Now on to the Daily Dish~ Memorial Day BBQ style!

For breakfast, I had a Protein Shake as usual, but this time I made it a Chocolate-Vanilla Twist! I made my usual ‘base’ with few drops of vanilla, then poured half into my cup. I then added a tbs of cocoa powder in the blender to the other half,  and gave it a quick mix, and poured the chocolate on top of the vanilla….and there you have it… A chocolate-vanilla TWIST! :)

I had it with the normal PB Pows topping for crunch of course! I felt like I was eating a frozen yogurt twist for breakfast! :)

After working out, my sister and I came back to skewer our Grilled Chicken Kabobs and throw everything on the grill (we cut/marinated everything the night before so it was simple, and really flavorful!)

The kabobs were made with chicken breasts, bell peppers (3 different colors for variety), zucchini, red onions, and pinapple! I cut everything up in bite size pieces, put it in ziplock baggies, and poured in some terriaki sauce and the leftover pinapple juice for a little bit of sweetness.  Pretty kabob skewers made it even more fun and festive!

We also had a salad with beets, red onion, feta cheese, and croutons.

Grilled corn on the cob (mmm….)

Fresh watermelon.

And for dessert I made one of my favorite summer time treats, Strawberries and Cream Triffle! It was SO good! :)

I crushed some roasted almonds and sprinkled them on top!

We ate a late lunch, (and we ate a lot) so for dinner I had a salad with some of the leftover veggies, and helped myself to a few more bites of that amazing triffle… (all really healthy, yet filling and satisfying food!) We spent the rest of the night playing games and hanging out, which would have been by the pool, but the weather wasn’t on our side.  I was wonderfully satisfied with the whole day, and it was so good to spend quality time with family! I hope yours was equally as wonderful, and you had a moment to relax and spend time with family and friends, and even thank someone who has served our country!

How did you spend the holiday weekend?! Did you make any ‘special’ dishes!? If so, what did you make!?

Thanks Amber! It is the exact same recipe as the one I posted on my site, but I put it in one big dish instead of individual cups! :)

Jennifer, that sounds heavenly! PB/choc is my fave combo!
Christina, that is just ONE of the many reasons I LOVE SUMMER!
Lisa, you have to try ‘crunchy’ toppings on your smoothies! I sometimes crush up a ice cream cone (15 calories) on top..so good!
