Whew! Well after a 6 day work week at my new job I am finally sitting down for what feels like the first time in a week! I love my new nursing job, and I so appreciate all the prayers and words of encouragement! God has been so faithful to lead and guide me through this time!

I have already learned so much about nursing, myself, and God in the short period of time I have been at this new job.  The most important thing is that of course that I simply can’t lean on my own understanding, and that I NEED GOD and His wisdom.

Another thing that has changed after starting a full time job is my daily meals! With 8 hour work days ahead of me I don’t exactly have the time to cook a hot meal every day, and I definitely have to plan ahead!

One of the things that has really helped save time is cooking ‘in large batches’. This way I can get two or three healthy and delicious meals out of one cooking session! I will share one of the large batches of food I made today, which will last me the next few days for dinner!

Now on to the Daily Dish!

For breakfast I had my usual Peanut Butter Butterscotch Protein Shake…And since I was out of PB Pows…I used a Cake Cone and crushed it on top! It was kind of like an Upside-Down Ice Cream Cone for breakfast!

I followed it with the usual…Coffee with Stevia and Cream! I just ordered one of my favorite flavors of K-Cups on Amazon- Pecan Praline! It was $24.00 for 50 K-Cups~ I just love finding great deals!

For lunch I felt like having something warm and ‘homey’ (I guess I was craving home since I’ve been gone all week I suppose!) So I whipped up a batch of my Peanut Butter Pancakes made with Coconut-Flour! I used my amazing new griddle my mom-in-law got me for my birthday! It is so simple to clean, and cooks pancakes (and more) evenly and perfectly every time!

After I used the griddle, my husband got in the kitchen to make (the one and only) meal that he makes for himself…French Toast! He loves the griddle too…And as you can see, he is very proud of his ‘cooking’ ability! ;)

On my way to work I usually grab a quick snack…Like a Zone Bar, one of my favorite nutrition bars!

For dinner I will be at work (I work 3-11:30pm)…So this morning I cooked one of my ‘large batches’ of food to make packing dinner for the next few days a breeze! (*Note: Sorry the chicken looks kind of gross..I brown the glaze to bring the sweetness out, so it looks dark, but is mighty tasty!) :)

I made Teriyaki Glazed Chicken in a large non-stick pan on the stove.

Along with some Broccoli-Cauliflower Salad.

And a Greek Yogurt for some cool sweetness to finish my meal, since I always crave a bite of something sweet after a meal anyways! (I also packed a packet of stevia to add to it of course!)

I also bring A Packet of Natural Crystal Light Lemonade that I add to a water bottle… (These are new..They are sweetened with stevia and the are wonderful tasting!)

I am just starting to feel like this new part of my life is starting to feel more smooth…And i’m slowly starting to form a ‘routine’, which i’m happy about, because I’m a routine kind of girl! :)

Cute lunch bag!! I’m going to a Thirty-one party in a week and I have my eye on a cute bag similar to the one you have:)
I used to eat Zone bars all the time,but then a couple of years ago they changed an ingredient and I don’t really like them anymore:(.
You’re lunch looks good! I am also someone who likes routine, so I can relate to what you’re going through:).
I’m glad you’re new job is going well. I started a new job in August 2008 and I remember how overwhelmed I felt. I know being able to rely on God for strength and perseverance helped me make it through the difficult part of starting a new job. It also helps knowing that God never gives us more than we can handle! Have a good week!

In opposed to the girls comment above mine- i believe God DOES give us more than we can handle! on purpose! So we have no choice but to rely on HIS strength!! :)

When I come back from the hospital I always want hot breakfast foods – oatmeal, waffles, etc whether it’s 8am, 10am, or 8pm! Glad you new job is going well – I am excited to see what meals you come up with for on the go.

Ah I love your lunch bag. It’s so cute. I’m so glad that work is going so good for you. I know that working around patients can really make you appreciate the healthy life that you have. I was a candy stripper back in my day, lol, and needless to say, I learned a lot from the patients that I assisted.

I know how you feel sweet pea! All the prep work gets tough once in awhile. I’m going back to school part time, so I wake up at 6:30, get everything ready for work from 8-4, and then hit the gym on campus from 4:15-5:30, and then shower in the locker room for class from 6-8 on Mon, Tues, & Thursdays! It feels like a whirlwind! I totally admire you for going into nursing. It is a career requiring a lot of patience and dependance on the Lord, you’re right!

What did you put in with your broccoli and cauliflower? It looks really yummy! Creamy, almost?! The pancakes look great!

Working full-time definitely forces you to get creative with your meals.

I took a summer course as well, so I was gone from the house from 8:30 AM to 10:00 PM two nights a week and felt like I had to pack my entire fridge with me to make it through the day! Ha!

I did a lot of prep work the night before, and did the best I could. I did end up hitting a few drive throughs (ack!) after class due to stress, but now that the class is over the drive through store is CLOSED for me.
