Heat a large skillet over medium-high heat, and spray with cooking spray. Add the pepperoni and sauté until cooked to your liking. Remove from pan and set aside on a paper towel.
Add zucchini noodles to the pan and toss for two to three minutes over medium high heat to warm through and allow to tenderize slightly. Allow the water from the zucchini to completely cook off for an additional 1-2 minutes. (Note: If your zucchini noodles are giving off a lot of excess water, you may also strain them in a colander at this point, then add them back to the pan.)
Continue to cook over medium high heat and stir in the crushed tomatoes and seasonings. Add the pepperoni slices back to the pan and continue cooking until the sauce has thickened. Top with parmesan and enjoy!
