In a large bowl mix together the oats, protein powder, baking powder, salt, cinnamon, and sweetener.
In a separate bowl mix together the wet ingredients, (everything else except for the topping).
Mix together the wet and dry ingredients until everything is combined.
Pour the mixture into the pan and sprinkle the topping over the protein bar mixture.
Bake for 30-35 minutes, or until bars are set. Allow to cool completely and cut into bars. Bars stay fresh for up to one week in a covered container at room temperature or in the refrigerator or freezer for an extended period of time.
