In a medium size bowl, combine all of the ingredients, and whisk until everything is well combined and batter is smooth.
Meanwhile, heat a nonstick griddle (or nonstick skillet) coated with cooking spray over medium heat. Spoon batter onto griddle, (makes four small pancakes or two large). If adding chocolate chips, sprinkle chips over pancakes before turning. Turn pancakes over when tops are covered with bubbles and edges look cooked. Coconut flour pancakes will puff up, and must be lightly 'pressed down' after you flip them to help them cook through.
