Apple Bacon Chicken Salad for One

Here's the Dish

When I am in need of a really good chicken salad recipe that is packed with flavor but not all of the fat, this is my go-to recipe! It’s full of chopped apples and crisp bacon, and the dressing is a creamy blend of low fat mayonnaise and Greek yogurt! I enjoy it on its own or in a low carb wrap! I can promise you this chicken salad is so creamy that you will not be¬†disappointed!



The estimated total time to make this recipe is 5-10 minutes.


In a small bowl, combine chicken and all of the remaining ingredients. Serve as is, or on a lettuce wrap or low carb wrap of choice!


1/2 cupChopped cooked chicken (about 2 oz cooked)
1 tbsPlain low fat Greek yogurt
1 tbsLow fat mayonaise (or an additional tbs Greek yogurt)
1/4 cupGala apple, chopped
1/2 stalkCelery, finely chopped
1 tbsFinely chopped red onion
Pinch Salt, pepper and stevia to taste
1 Piece center cut bacon, cooked and crumbled
Optional: 1 tsp chopped pecans, 2 tsp chopped almonds
Low carb wrap or lettuce wrap to serve

I made this recipe to serve one, but it can easily be multiplied to make the desired serving size!
