Apple Bacon Coleslaw with a Crunch!

Here's the Dish

Coleslaw is one of those sides that you think of and you automatically know it is unhealthy. The mayo-based dressing that the typical coleslaw is drenched in can account for a meal’s worth of fat and calories. This recipe has all of of the richness of a typical coleslaw, but with a few healthy swaps and surprise ingredients, this generally bland side dish is transformed into a sweet and salty explosion of flavors in a much healthier way!


The estimated total time to make this recipe is 10-15 minutes.


In a small bowl, mix together ingredients for dressing. In a large bowl, mix everything else together (except for bacon and almonds). Pour dressing over coleslaw mix, and let sit in the fridge one hour or more (tastes best when it sits over night). Sprinkle bacon and almonds over coleslaw just before serving. Enjoy!



1/4 cupApple cider vinegar
1 cupPlain low fat Greek yogurt (or 3/4 cup yogurt, 1/4 cup light mayo)
1/8 cupHoney (or agave nectar)
1 tsp Salt
1/2 tspPepper
2 tbsLemon juice
1/4 cupSweetener of choice (or to taste)
1 lbBag coleslaw mix (or 1 head cabbage, thinly sliced0
3Scallions (green onions) thinly sliced 1
1 medium Fuji or granny smith apple, peeled if desired, and finely chopped
Just before Serving:
1/3 cup Almonds (I used toasted almonds), chopped
5 piecesCenter cut or turkey bacon cooked until crispy, and crumbled

1 Or 1 small red onion, thinly sliced.

Fixed this for New Year’s Day and I liked the idea of it. Something was just too tart for me, not sure if it was the vinegar or lemon, or combination of both. I will adjust a little next time because that crunch is great.

This turned out fantastic! My only substitution was to use 0% fat Greek yogurt (that’s what I found at the store) and I omitted the almonds. It went over very well – my friends loved it too. Great crunch to it as you said… and the flavors of the apple + bacon were very complementary! Thank you!
