Apple Pie Protein Crepes!

What could be better than Warm Apple Pie Crepes on a crisp autumn morning!?! These apple pie crepes taste just like a piece of apple pie all with the bonus of a protein punch! There is no better way to start your day than with this perfect apple treat!


The estimated total time to make this recipe is 5-10 minutes.


To Make the Crepes: Place all of the ingredients for the crepes in a blender and blend until oats are ground and mixture is smooth (will look like a thin pancake batter.) Spray a large non-stick pan with cooking spray and turn heat to medium. Pour 1/2 of batter into pan, and swirl around so the batter covers the entire pan, (should form a thin layer of mixture over entire pan). When the crepe begins to form bubbles, it is ready to flip! Gently flip crepe and let cook until it is golden brown on both sides. Repeat to make the second crepe, and turn off heat. Place crepes on two plates.


To Make the Filling: Place all of the ingredients in a small bowl, and microwave for 3-4 minutes, or until apples are soft and tender. Fill each crepe with 1/2 of the filling and enjoy!

1/2 cupEgg whites (or about 4 egg whites)
2 tbsProtein powder (or 2 tbs additional oats)
2 tbs Unsweetened applesauce
2 tbsUnsweetened almond milk (or low fat milk)
1 pktStevia (or 1 tbs sweetener of choice)
1/2 tspBaking powder
1/2 tspApple pie spice
1/2 tspCinnamon
1Medium apple, skin removed and diced
1/2 tspApple pie spice
1 pkt Stevia (or 1 tbs sweetener of choice)
1 tbsHoney or sugar free maple syrup

These are AMAZING! I’ve tried several “clean” protein crepe recipes and non of them compare to this!!! I always have ground oats on hand so if I’m in a hurry I just throw them in a bowl and mix (instead of the blender) and they turn out just the same. Even my 2 yr old loves them! Thank you!!

I made these this morning, with skim milk and minus the apple pie spice and apple filling (didn’t have any). Not only were they DELICIOUS, but they tasted sooo much like apple pie! I was so surprised. Also, they had a great texture.

I made a crêpe and a thick pancake, but I recommend making them into three crêpes.

I liked these so much I’ll make them again tomorrow, this time with the apple filling :D
