Preheat oven to 350 degrees. Line a baking sheet with foil and spray with non-stick spray.
Combine chopped apples, lemon juice, spices, and syrup in a small bowl, and mix well.
Lay out your egg roll wrappers on prepared baking sheet, and divide filling between them. Dip your finger in water, and run it along the edges of the egg roll wrappers. Fold wrappers in half lengthwise, pressing edges together to seal them shut. Press a fork firmly along the borders of the egg roll wrapper to seal pocket shut. Spray the top of each pocket with non stick spray, or butter spray.
Bake pockets in preheated oven for 15 ? 18 minutes, or until edges begin to brown. Allow to cool for a few minutes, and enjoy!

 I used NuNaturals More Fiber Stevia Baking Blend. If using packets of stevia, I recommend using about 6-8, or adjust according to taste.
