BLT Chicken Salad

Here's the Dish

I don’t know about you, but I love chicken salad sandwiches, so this BLT chicken salad is a divine spin on the classic! To me, chicken salad makes the perfect quick and easy lunch whether it’s at home or on the go! You can also make big batches at one time using my Easy Shredded Chicken recipe, and you have convenient, healthy, & tasty food at it’s finest!

The estimated total time to make this recipe is 5-10 Minutes.

In a small bowl, combine chicken and all of the remaining ingredients. Serve as is, or on a lettuce wrap or low carb wrap of choice!

1/2 cupChopped or shredded cooked chicken (about 2 oz cooked)
1 tbsPlain low fat Greek yogurt
1 tbsLow fat mayonaise (or an additional tbs Greek yogurt)
1/4 cupTomato, diced
1 pieceCenter cut bacon (or turkey bacon), cooked and crumbled
1/2 cup Shredded lettuce
PinchSalt, pepper and stevia to taste
Optional:Low carb wrap, bread, or lettuce wrap to serve

Katie's Tip!

I made this recipe to serve one, but it can easily be multiplied to make the desired serving size!

This looks fab! If we use the slow cooker chicken recipe to make a bigger batch of this salad, would the WWP+ value change? The same serving size of chicken is 4 WWP+ for the slow cooker and the whole thing here is only 3 WWP+. Thanks for another yummy looking recipe!

I’m very new to this, so I hope this isn’t a silly question…if you left out the lettuce, is this something that you could make a large batch and freeze for later use?

I hope this doesn’t sound silly but if you were to say make enough for 5 servings, what would be considered the serving size? I have a one month old so my brain is a little fuzzy!

Made this for lunch today but instead of lettuce & tomato (which I didn’t have) I added 2 tbs shredded cheddar and 1 tbs bbq sauce and made a bbq chicken bacon wrap! It was great… super tasty and filling. Thanks for all the inspiration Katie!

Let me begin by saying I hate Greek yougurt but I am trying my best to loose some weight. I mixed this up using your recipe for shredded chicken (crockpot). I gritted my teeth and closed my eyes and shoved a bite into my mouth and I was amazed! This is delicious!!!! I went on to try your skinny mac and cheese complete with cottage cheese (yet another thing I don’t eat) and WOW!!!! You are wonderful! I am such a picky eater and I have always hated that because it makes it difficult to find healthy things that I will eat. I love your site and every recipe I have tried has been delicious. Thank you so much!!!

My husband (who hates low cal foods) loved this! He didn’t figure out that there was yogurt instead of full fat mayo! I am so happy to have found a healthier version of chicken salad! Big hit in my house!
