Wash the sweet potato and pierce it with a fork. Microwave for 5 minutes or until tender, flipping it over halfway through cooking. Let cool and cut in half lengthwise.
Meanwhile, Spray a large sauce pan with cooking spray. Cook the bacon over medium heat until crisp. Remove from pan and set aside.
Add the eggs to the pan and scramble over medium heat. Add salt and pepper to taste. Crumble bacon and add to eggs.
Slightly mash the inside of the sweet potato in each half and top with egg mixture. Top with cheese and microwave for 30 seconds, or until the cheese is melted to your liking.
