Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or foil sprayed with non-stick cooking spray.
Combine everything except for the grated carrots (and optional add in's if using) in a medium bowl, and stir to combine. Stir in grated carrots and optional ingredients if using. Scoop batter onto prepared cookie sheet, dividing dough evenly to make 12 cookies total.
Flatten each ball slightly with the back of a spoon, or with your hands, forming into the cookie shape you prefer (note- they will not spread like some cookies, so that is why I recommend getting the shape you want now). Bake cookies for 8-10 minutes, or until lightly firm to the touch. Enjoy!
