Preheat oven to 350 degrees. Spray an 8×8-inch baking pan with nonstick cooking spray. Set aside. (You can also use a 9×9-inch pan, but the bars won’t be as thick. Also, you will need to decrease baking time by about 3-5 minutes).
Add everything (except chocolate chips) in a blender or food processor and blend until batter is smooth. You can either stir in chocolate chips at this point, or sprinkle them on top later. Pour batter into prepared pan, and sprinkle chocolate chips on top if you haven't already done so.
Bake 20-25 minutes, or until a toothpick comes out clean. Cut into 9 bars. Enjoy immediately or store in air tight container in the fridge for up to one week, or the freezer for up to one month.
