Spray a large sauté pan with cooking spray and warm over medium heat. Sauté cauliflower rice in the pan for about 3-4 minutes if using fresh, or 5-6 minutes if using frozen, or until cauliflower rice is cooked through and tender. Remove from heat.
Add the milk, lime zest, lime juice, and cilantro to the pan. Season with salt and adjust seasonings as desired. Enjoy!
Traditional Rice or Quinoa:
Rinse rice or quinoa under cold water until water runs clear. (This removes some of the starch from the rice so it isn’t too sticky.)
Combine the rice, milk, water, and pinch of salt in a small saucepan. Bring to a simmer and cook partially covered on medium/low heat until liquid is absorbed, about 12-15 minutes.
Remove the pan from the heat. Fluff the rice with a fork and stir in the lime zest, lime juice, and cilantro. Season with salt and adjust seasonings as desired.
