Lay two large pieces of parchment paper (or foil) on a cutting board for rolling up your sandwiches. Wash and dry lettuce leaves and lay flat on the parchment paper. (I overlapped 4 pieces of romaine for each sandwich.)
Spread 1 tbs hummus (or sauce of choice if using) on one of the lettuce leaves as a base for each sandwich. Then layer equal amount of turkey on each of the beds of lettuce, followed by the strips of bacon, avocado, eggs, and tomatoes, as well as cheese if using. Sprinkle salt and pepper on to taste if desired.
Use the parchment to help and roll the ingredients into a wrap, folding the sides in as you roll. Refrigerate or enjoy within 24 hours of making.
Slice the wrap through the parchment paper in half just before serving. Enjoy!
