Steam cauliflower in bag until just tender if using frozen, or lightly steam until just tender in a pot or microwave steam basket if using fresh, about 3-5 minutes. (Note, you want cauliflower to be just barely fork tender. Be careful not to over steam it, as you don’t want it mushy or falling apart for this recipe). If you prefer your cauliflower raw, you can skip this step.)
Meanwhile, chop up the rest of your vegetables and add to a large bowl.
Add dill, lemon juice, salt, sweetener, and greek yogurt to the bowl and stir until well combined. Taste and adjust flavors if necessary to your personal taste. Add steamed cauliflower and gently toss to combine.
Place in fridge until ready to serve (tastes so good when it's chilled). Will keep in the fridge covered for up to 4-5 days.
