Spray a 9x9 inch baking pan with cooking spray and line the bottom with parchment paper. Mix brown rice syrup, peanut butter, and a pinch of salt together in a large mixing bowl. Add cereal and mix until well combined, and rice cereal is well coated in brown rice/peanut butter mixture. Spread in pan evenly and top with melted chocolate if desired.
Refrigerate for at least 30 minutes, or until set, and cut into 12 even size bars. Enjoy!
