Crockpot Cooking Method: Spray the crockpot with cooking spray. Add broth and chopped sweet potatoes to the crockpot. Cover and cook on high for 3-4 hours or on low 6-8 hours. Once the potatoes are fork tender, remove sweet potato chunks with a slotted spoon and place in a bowl.
Instant Pot Cooking Method: Spray the Instant Pot with cooking spray. Add broth and place the steaming trivet inside. Place sweet potatoes on top of trivet.
Place the lid on, and seal the pot. Use manual mode to set on pressure cook for 18 minutes. Allow the device to depressurize "naturally." This takes about 15 minutes. (Pressure valve will lower). Carefully remove lid and remove sweet potato chunks with a slotted spoon and place in a bowl.
Mix sweet potatoes with the seasonings you choose along with the milk or maple syrup, (this is really depending on what flavor you are going for, a bit more sweet or savory), and whip potatoes with an electric hand mixer (you can also use a masher or stand kitchen aid mixer if you prefer) until smooth.
