Stir everything (except chocolate chips) together in a small bowl until well combined. Scoop mixture into a ziplock bag and snip off one of the corners. Line 5 muffin tins with silicone or parchment paper muffin liners, (foil would also work, but spray with cooking spray first). Pipe yogurt mixture evenly into 5 liners, and top with chocolate chips if desired.
Place muffin tin in freezer for at least 4 hours, or until frozen. Remove cookie dough bite from freezer and enjoy immediately for a frozen treat, or let thaw for a few minutes just before enjoying for a softer, more creamy frozen treat.
