Heat oven to 425 degrees. Spray a 9x9 inch baking pan (or cast iron skillet) with cooking spray.
Mix all of the ingredients together in a medium bowl, and whisk with an hand held electric beater (or kitchen aid mixer) for about 2-3 minutes, or until a smooth fluffy batter forms.
Pour the batter into prepared pan and cover with foil. Bake for 15 minutes covered, then remove foil and bake an additional 8-10 minutes, or until pancake is golden and puffed, and a knife comes out clean. Let cool for at least 5 minutes.
Cut pancake into 6, and serve warm with low sugar syrup, strawberries, cinnamon, whipped topping, or topping of choice!
