Put the garlic and onions in the bottom of a large pot. Turn heat to medium high and cook until onions are turning lightly brown and becoming tender, stirring frequently. Add celery, carrots, chicken stock, honey, and the rest of the seasonings. Stir to combine and cover. Allow to simmer over medium high heat for 12-15 minutes, or until carrots and celery are fork tender, stirring occasionally. Put everything in a blender and blend until smooth. Pour back into pot, (heat turned off), and add honey and cornstarch to the pot. Stir until everything is combined and gravy begins to thicken.
