Preheat oven to 425 degrees. Line a baking sheet with parchment paper, (or foil and spray with non-stick spray.)
In a medium bowl, mix together the bread crumbs, parmesan cheese, and salt and pepper.
Coat chicken in honey, followed by the bread crumb mixture, making sure each chicken piece is evenly coated with bread crumbs.
Place chicken on baking sheet, and lightly spray the nuggets with cooking spray. Bake for 8 ? 10 minutes, then turn chicken nuggets over, and cook an additional 4 ? 5 minutes or until cooked though.
