Place everything except for the spinach and parmesan in crockpot. Cover and cook on high 3-4 hours, or on low 6-8 hours, or until lentils and carrots are cooked to your liking.
If you added a bay leaf, remove it at this time. Add spinach and parmesan and stir to combine. Continue to cook on high for approximately 5 minutes and enjoy!
