Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper, spray lightly with cooking spray, set aside.
Add all ground meat, 1/8 cup maple syrup, and the rest of the ingredients to a large mixing bowl and mix until just combined. Form patties in hands and place on baking pan, (I did this by forming a ball then patted it down so it was flat. To get a perfectly round patty, use a small rimmed cup and jiggle it around the edges so it forms a round circle).
Bake sausage patties for 10 minutes, then flip and drizzle with remaining maple syrup. Continue cooking for 2-5 minutes, or until cooked through; Or for a more golden brown patty, remove from the oven and finish cooking in skillet. Spray skillet with cooking spray and heat over medium high heat. Add patties and drizzle with remaining maple syrup. Cook 2 minutes on each side until golden brown and cooked through.
Serve patties warm; Or cook the patties and refrigerate for up to 5 days or freeze them for up to 3 months.
