Mint Chip Ice Cream Pie

Here's the Dish

If you enjoy mint chip ice cream, Oreo cookies, and hershey’s syrup, then this is just the treat for you! This decadent ice cream pie is guaranteed to satisfy any craving for a rich mint chip dessert without weighing you down!


The estimated total time to make this recipe is 4 hours or overnight.


Break up Pre-Made Oreo Crust and pour cookie crumbs into a pie pan coated with non-stick cooking spray. Press cookie crumbs down with hands to form a ‘new crust’ in pie pan.


Pour Hershey’s Syrup evenly over crust. Spread fudge evenly over crust with a spatula to form a layer of fudge over the cookie crust. Place in freezer for 10-15 minutes, while you are preparing the ice cream layer.


Mix together the softened ice cream and the whipped topping. Add food coloring a few drops at a time, mixing until desired color is reached.


Pour ice cream over fudge layer, smoothing evenly with a spatula. Garnish as desired and place in the freezer for 4 hours, or overnight.

5-10Drops green food coloring

I make my ice cream pies just like this with different flavor light ice creams and alternate the ready made crusts as well. My husband is diabetic so I like to make all his desserts with the same ingredients you cook with.
