Preheat oven to 350 degrees. Line a baking pan with parchment paper or a baking mat. Mix all the dry ingredients in a large bowl. Stir to combine and add wet ingredients. Mix until just combined.
Spoon onto a baking pan, (I used an ice cream scoop and flattened them a bit with my hand). Top with chocolate chips or chopped pecans if desired. Bake for about 18-20 minutes. Let cool on the pan and enjoy or refrigerate for one week, or freeze for up to 3 months.
