Heat oven to 350 degrees. Spray a miniature muffin pan with non-stick cooking spray. Set aside.
Combine everything except for the peanut butter cups in a large bowl. Stir everything is combined.
Shape dough into 3/4-inch balls. Place each ball into prepared miniature muffin cup. Bake 15-17 minutes or until lightly browned on top.
Remove from the oven and press peanut butter cup in center of each cookie immediately after removing from the oven.
Let cookies cool a minimum of 30 minutes, (it is important that these cookies are cooled completely before trying to remove them from the pan, or they will fall apart). Enjoy!
