Preheat oven to 375 degrees. Line a baking sheet pan with foil or parchment paper (for easy clean up). Spray with cooking spray.
In a medium bowl, combine the dry ingredients and stir to combine. Add the syrup/honey, extract, and egg white. Stir until the dry ingredients are combined with the wet. Spread evenly over the baking sheet (mixture should be crumbly).
Bake 25-30 min, crumbling and breaking apart the granola with fingers slightly once cooled. Once granola is completely cooled, stir in butterscotch chips if desired. Store in a sealed container.
