Microwave the chocolate baking squares in medium microwaveable bowl for one minute, or until melted, stirring every 30 seconds.
Stir the rest of the ingredients into the melted chocolate, until mixture thickens. Form fudge into 2 rectangular blocks, and sprinkle peppermint candy on top if desired. Wrap fudge in saran wrap, or place on parchment or wax paper, and place in the freezer for 30-60 minutes, or until firm enough to cut into squares. Wrap up and give as a gift, or enjoy yourself!
