Pumpkin Pie Protein Overnight Oatmeal

Here's the Dish

This is one of the easiest, yummiest, and well balanced breakfasts that can be thrown together the night before, and is ready when you are in the morning! There is no longer any excuse for not eating a delicious and satisfying breakfast, no matter how busy your mornings are! This pumpkin pie overnight oatmeal is guaranteed to spice up the most important meal of the day!

The estimated total time to make this recipe is 5 minutes.

In a small bowl, mix the pumpkin, milk, and yogurt together. Add the rest of the ingredients and stir to combine. Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour so the oats soften and absorb the liquid). Top with syrup/honey or chopped pecans for crunch if desired! Enjoy cold, or microwave for 30-60 seconds to enjoy warm!

Since it is two servings can I make two and will it keep for the next two days? Or will it become mush by the second day?

When you calculate the WW points do you include any maple syrup, honey, nuts or any of the “optional” items or do I need to add that to the total?

Can someone recommend a protein powder for this recipe? I made it last night and just had it for breakfast this morning and it was so yummy! But I skipped the protein powder and I’m wishing I hadn’t because it would probably be more filling that way. I’ve never bought protein powder before so suggestions would be appreciated.

Also, I am a college student and am not trying to spend a ton of money on protein powder, but do want to buy some. Any you suggest that are good but not extremely expensive?

I am definitely going to make this!! My family is so bored with plain oatmeal but we still all eat it everyday. Is vanilla protein powder OK? That is what we have. I am hesitant to use it because the flavor might overpower the whole recipe. The vanilla flavor has a fake taste to it. What kind do you use?
