Preheat the oven to 450 degrees. Line a rimed baking pan with foil and spray with cooking spray, (or parchment paper or baking mat). Dry chickpeas very well and remove outer skins by rolling them between two paper towels or in a kitchen towel (this will help them get crisp). Mix ingredients for spices in a bowl and add chickpeas, tossing them in the seasoning until well coated.
Spray chickpeas with cooking spray and roast in the oven. Roast for 30-40 minutes, checking at 30-35 minutes to ensure they don’t burn. If you want them a bit more on the crunchy side, you can turn off the oven and leave chickpeas in the warm oven, allowing the chickpeas to sit at least another 15 minutes to finish crisping up, otherwise remove them from the oven and let cool on baking pan. Sprinkle additional salt over chickpeas to taste if desired. Store in a zip lock bag or a tightly sealed container once completely cooled to room temperature.
